Holiday Bark 3 Ways (Dairy & Refined Sugar Free!)

I am finally beginning to come to terms with the fact that I am intolerant to dairy and quite sensitive to refined sugar. Though a very bitter pill to swallow, even more so with during the holiday season, there is no way I’m going to miss out on what is my absolute favorite holiday treat – peppermint bark! Here I’ve shared some super easy and quick recipes for delicious dairy and (mostly) refined sugar free holiday barks to enjoy this season! It makes for a great treat, not to mention a lovely gift!

Peppermint Bark

It’s only right to start with the classic and fan favorite, peppermint bark. Though this one isn’t 100% refined sugar free due to the crushed candy cane topping, you’re looking at a lot less sugar and ingredients than most peppermint barks you would buy in store.

Ingredients:

Vegan dark chocolate chips (I use Lily’s Premium Baking Dark Chocolate Chips)

1/2 tsp Peppermint extract

Crushed organic candy canes

Preparation:

1. Line a baking dish with parchment paper

2. Melt chocolate chips over medium heat, add peppermint extract, and stir constantly until smooth

3. Pour melted chocolate into prepared baking dish

4. Sprinkle crushed candy canes

5. Let chill for 20-30 minutes

6. Remove from freezer and cut or break bark into pieces.

Pomegranate Pecan Peppermint Bark

This bark is a slightly healthier take on the classic peppermint bark. Ditch the crushed candy canes and instead sprinkle pomegranate seeds and pecans. This one is 100% refined sugar free!

Ingredients:

Vegan dark chocolate chips

1/2 tsp Peppermint extract

Chopped pecans

Pomegranate Seeds

Sea Salt

Preparation:

1. Line a baking dish with parchment paper

2. Melt chocolate chips over medium heat, add peppermint extract, and stir constantly until smooth

3. Pour melted chocolate into prepared baking dish

4. Sprinkle chopped pecans, pomegranates, and sea salt

5. Let chill for 20-30 minutes

6. Remove from freezer and cut or break bark into pieces.

Coconut Cranberry Pistachio Bark

Ingredients:

Vegan dark chocolate chips

Slightly toasted coconut

Dried cranberries

Pistachios

Preparation:

1. Line a baking dish with parchment paper

2. Melt chocolate chips over medium heat and stir constantly until smooth

3. Pour melted chocolate into prepared baking dish

4. Sprinkle pistachios, coconut, and dried cranberries

5. Let chill for 20-30 minutes

6. Remove from freezer and cut or break bark into pieces.
